Healthy Summer Salad Recipe With Black Beans

Are you looking for some healthy summer salad recipes made with black beans?  During the warm summer months, a black bean salad is another type of summer salad that I like to make for my family. 

Black beans are part of the legume family and are just packed with many health benefits.

Fresh corn pairs well with black beans but so does tomatoes, avocados, mangoes, red onion and peppers. 

Edamame and chicken also pair well with black beans and add additional protein to a salad.

This salad has been made with fresh corn, black beans, red bell pepper, cherry or grape tomatoes, jalapeno, avocado and cilantro.

The ingredients for the salad dressing are lime juice, avocado oil, cumin and chili powder.   

The corn can be prepared any way that you like.  I prefer to boil the corn because I find this is the quickest way to prepare corn for this type of salad.  

I think this salad would be very satisfying served as a side dish or could serve as a meal on its own if your are vegan.
